Apple Oatmeal With Pecans And Dried Plums
Nothing warms you up on a cold day quite like oatmeal. Serve this delicious version for breakfast or anytime! This apple oatmeal with pecans and dried plums is quick and easy to make. Stock up on the ingredients so that you can make it often in the winter.
Apple Oatmeal with Pecans and Dried Plums
2/3 cup old fashioned oats (not quick cooking)
1 cup apple juice
1/2 cup water
1/2 cup dried plums, chopped
1/4 cup dried apples, chopped
1/4 tsp. cinnamon
1/8 tsp. salt
2 Tbsp pecan pieces
1/3 cup milk
1 egg
1/2 tsp. vanilla extract
Butter and brown sugar
Place the oats in a pan. Pour the apple juice and water in with the oats and mix. Add in the plums, apples,cinnamon and salt and mix to combine. Fold in nuts. Cook over medium high heat and bring mixture to a steady boil. Reduce the heat to low and continue cooking an additional 4 minutes, stirring often. Mixture should thicken and no water should be left in the pan. In a small bowl whisk the milk, egg and vanilla together well. Pour over oatmeal. Continue cooking on low for one minute stirring constantly. Serve warm with butter and brown sugar.
