Kids can be picky eaters but luckily most kids love fruit such as bananas. Here are a few banana recipes that your kids will really enjoy.
Banana Wrap
1-8 inch flour tortilla
2 tablespoons crunchy peanut butter
2 tablespoons grape jelly
1 firm banana
Soften the tortilla in the microwave for about 10 seconds on high. Spread the peanut butter on the tortilla. Spread the jelly over the top of the peanut butter. Put the banana on one side of the tortilla and roll, starting with the banana side. Serve with a nice cold glass of milk.
Two more banana recipes:
Banana Pancakes
1 cup all purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas
Mash the bananas and set aside. In a small bowl, combine flour, sugar, baking powder and salt. In a large bowl beat the egg. Mix in the milk, vegetable oil and mashed bananas.
Stir the flour mixture into the banana mixture. Batter will be slightly lumpy.
Lightly grease griddle and heat over medium high heat. Pour approximately 1/4 cup batter onto griddle for each pancake. Cook until both sides are golden brown. Serve hot with butter and your favorite syrup.
Frozen Banana Pops
4 bananas
2 cups semi sweet or milk chocolate chips
finely chopped nuts, sprinkles or coconut (optional)
8 wooden craft sticks
Peel bananas and cut in half crosswise. Insert a wooden stick into flat end of each banana half. Lay bananas on a shallow pan or baking sheet lined with parchment paper; freeze for about 20 minutes, until very firm.
Melt chocolate chips in microwave on medium setting for about a minute, stirring after 30 seconds. Dip each banana into melted chocolate then roll into topping of your choice. Return to freezer for one hour or until frozen. Wrap and store leftovers in the freezer.
