Basmati Rice Salad

When it comes to cost, rice is a very cheap staple to keep on hand. Basmati rice is a bit different than traditional white rice since it doesn’t stick together like regular rice. Basmati rice costs a little more than white rice but is still an inexpensive staple to keep in your kitchen pantry. It is also nice to have on hand for healthy recipes such as this cold basmati rice salad.

Basmati rice is a nice choice for health reasons as well since it has a lower glycemic index than white rice. The prepared horseradish gives this salad a nice kick. The salad also contains heart healthy olive oil.

Basmati Rice Salad

Ingredients:
1 cup basmati rice
6 radishes, halved and sliced
½ cup dice red pepper
½ cup diced red onion
2 cooked beets, sliced (about 1 ½ cups)
¼ cup fresh chives, snipped
2 tablespoons fresh dill, chopped

Dressing:
¼ cup white wine vinegar
2 tablespoons prepared horseradish
1 tablespoon whole-grain mustard
1 teaspoon salt
1 teaspoon sugar
Black pepper to taste
½ cup olive oil

Directions:
Cook the basmati rice according to package directions. One cup dry basmati rice should yield approximately three cups cooked rice. Allow rice to cool.

In a large bowl combine the radishes, red onion, red pepper, cooked beets, chives and dill.

In a separate small bowl, whisk together the white wine vinegar, horseradish, mustard, sugar, salt and pepper. Add the olive oil gradually and whisk until the dressing is smooth.

Pour the dressing over the rice and combine well. Cover and refrigerate at least two hours before serving.

This healthy basmati salad will have a nice red color due to the different combination of red vegetables.
