Breakfast Casserole Recipes: Amish Breakfast Casserole
I love breakfast casserole recipes for breakfast, brunch or anytime! Not only are they easy to put together but they are good old fashioned comfort food! Breakfast casserole recipes such as the Amish breakfast casserole below can be quickly put together with ingredients that you likely have on hand.
Amish Breakfast Casserole
1 pound sliced bacon diced
1 med sweet onion chopped
6 eggs lightly beaten
4 cups frozen shredded hashbrowns
2 cups (8 ounces) shredded cheddar cheese
1 1/2 cups (12 ounces) small-curd cottage cheese
1 1/4 cups shredded swiss cheese
Preheat oven to 350 degrees. In a large skillet cook bacon and onion together until bacon is crisp; drain. In a bowl combine the remaining ingredients and add the bacon & onion mixture. Transfer to a greased 13×9x2 baking dish.
Bake uncovered for 35-40 minutes or until set and bubbly. Let stand 10 minutes before serving. 12 Servings.

Cranberry Punch
1 cup water
1 cup sugar
1 quart cranberry juice cocktail, chilled
1 small can frozen orange juice concentrate
1 large can unsweetened pineapple juice, chilled
1 quart cold water
1 quart ginger ale, chilled
Bring to boil the 1 cup of water and sugar. Cool. Mix remainder of ingredients with the sugar water except ginger ale. Add ginger ale right before serving. Note: Can be made ahead of time and frozen without the ginger ale added.
Breakfast casserole recipes make a very economical dinner, in fact I make them for dinner more than I do breakfast or brunch. We enjoy these the most during the cold winter months when something hot from the oven always tastes good
