Creamy Winter Vegetable Soup

Here is a nice change to a traditional tomato based vegetable soup. This winter vegetable soup is delicious and creamy. And because the vegetables are pureed you might even have luck getting your pickiest eaters to try it.  This winter vegetable soup does take a little more work that traditional vegetable soup because of the added step of pureeing but the final results are well worth it. Italian Wedding Soup

For years I have been eating Italian Wedding soup out of a can and never thought to just make some myself.  I don’t know what took me so long but tonight I did go ahead and make a batch and it came out really good.   In my opinion, to make a good soup you have to start with a good broth.  If you don’t have any chicken broth in the freezer then try the one I am hooked on called “Better than Bouillon” which is like a paste that you add to boiling water.  It is a little more expensive than bouillon cubes but well worth it (and probably cheaper than canned chicken broth).  Check your grocery store  near the bouillon cubes and canned chicken broth.  Read more…

Quick and Easy Pasta Vegetable Soup

I have to admit I am not fond of beans and haven’t tried this but I wanted to include it here since it appears to be a very budget friendly meal that could be put together in no time.  The measurements look a bit odd to me, in fact, it looks as though it would be way too thick to be a soup. It also doesn’t specify whether to drain the beans or the vegetables.  I would probably cook the spaghetti before hand since it seems like it would be too thick for the spaghetti to cook in the soup.  If you don’t have spaghetti on hand any pasta would do.  I would probably substitute rotini pasta or elbow macaroni.  The recipe calls for the standard size cans of soup, vegetables and beans.
