Chicken Casserole Recipes: Swiss Cheese Chicken Bake

make a lot of chicken casserole recipes and always buy boneless skinless chicken breasts in the big packs  when they are on sale for $1.99 a pound or less.  Usually I will buy at least 2 big packs which I can separate and freeze.  Doing it this way I find that by the time I start to run out it is on sale again.  Using for chicken casserole recipes means that I can stretch it to last longer.  Here is a delicious recipe that will help stretch your budget.  Remember to stock up on other ingredients such as cream soups when on sale or buy the generic when possible.  I have found that most generic brands work just as well as name brands in recipes. 

This may not be like other chicken casserole recipes since it is served over noodles instead of being a one dish meal.  However it is still a delicious and economical meal.

Swiss Cheese Chicken Bake

4 boneless skinless chicken breasts, cut in half
1 can cream of chicken soup
1 soup can water
3/4 cup seasoned bread crumbs
1/2 cup melted butter or margarine
1/4 pound swiss cheese, sliced thin

Preheat oven to 350.  Arrange chicken in a 13 x 9 pan and place one cheese slice over each piece.  Sprinkle with bread crumbs and drizzle with melted butter. Bake 1 hour or until chicken is cooked through.

You can cut the fat by using low fat soup and cheese and reducing the butter.

Meal suggestion:  Serve over egg noodles with a side of green beans for a simple to make economical meal

For a nice treat serve with dump cake for dessert.  You can whip this up in just a few minutes and let it bake while enjoying dinner.
