Crockpot Pork Roast with Cranberries
I love meals that you can just fix and forget; which is why I use my crockpot at least once or twice a week. After all, we all have those busy days when we come home tired and the last thing we want to think about is what to make for dinner. And whether it’s a soup or stew, chicken, beef or pork, crockpots are a great way to take an inexpensive cut of meat and turn it into something good enough to serve to company. This easy recipe for crockpot pork roast with cranberries is not only simple to put together but it would make a meal for company.
The holidays may be over but before you know it, Valentine’s day and Easter will be here so consider making a nice crock pot pork roast with cranberries and serve with a few quick and easy side dishes such as lemon roasted potatoes that taste great but don’t take a lot of time to prepare. If you are even more limited on time then just serve with a side of rice and steam some frozen vegetables in the microwave to get dinner on the table in a flash.
Easy Crockpot Pork Roast with Cranberries
Ingredients:
4 pound boneless pork roast
1 cup cranberries, finely chopped
1 teaspoon grated orange peel
ΒΌ cup honey
Salt and pepper to taste
Pinch of ground cloves
Pinch of ground nutmeg
Directions:
Gently rub salt and pepper over the pork roast and place in the crockpot.
In a medium sized bowl, thoroughly combine the chopped cranberries, grated orange peel, honey, salt, pepper, ground cloves and ground nutmeg. Pour the mixture over the top of the pork roast. Cover and cook on low for 8 to 10 hours.
