Oven Baked Oatmeal with Maple Syrup and Almonds

Oatmeal is a cheap breakfast staple that is perfect to eat on a cold morning. Oatmeal is high in healthy soluble fiber which helps fill you up until your next snack or meal. Soluble fiber can also help lower cholesterol.  Oven baked oatmeal is a nice treat to eat in the morning before venturing out on a cold day.  With maple syrup and almonds, it’s easy enough to make anytime but also great for those mornings that you would like to serve something special, like a nice breakfast on Christmas morning.

If your family enjoys oven baked oatmeal for breakfast you may even be able to serve it on occasion for a quick lunch or dinner, especially since the prep work is minimal.  A frugal way to boost nutrition is to serve with a side of scrambled eggs for added protein.  Round out the meal with some fresh fruit or orange juice.


Oven Baked Oatmeal with Maple Syrup and Almonds

1 ½ cups oatmeal
¼ cup slivered almonds
2 tablespoons maple sugar
2 tablespoons pure maple syrup
1 dash salt
3 cups milk
Dash of ground cinnamon

Directions:
Preheat oven to 350ºF.

Grease an 8” square baking dish or spray with non stick cooking spray; set aside

In a large bowl, combine the oatmeal, slivered almonds, maple sugar, maple syrup and dash of salt. Add the  milk and mix until combined.  Pour in the baking dish and cook for about 40 minutes or until the milk has been absorbed and the oatmeal is soft. Spoon into bowls and sprinkle each bowl with cinnamon.  Serve and enjoy!

Makes four to six servings.

Serving suggestion: Baked oatmeal can be a nice addition to your brunch along side other family breakfast favorites.  Ideas for a nice variety include favorites such as quiche, cinnamon rolls or quick breads, bacon, breakfast ham or sausage, fresh fruit, orange juice, coffee and tea.
