Quick and Easy Pasta Vegetable Soup

I have to admit I am not fond of beans and haven’t tried this but I wanted to include it here since it appears to be a very budget friendly meal that could be put together in no time.  The measurements look a bit odd to me, in fact, it looks as though it would be way too thick to be a soup. It also doesn’t specify whether to drain the beans or the vegetables.  I would probably cook the spaghetti before hand since it seems like it would be too thick for the spaghetti to cook in the soup.  If you don’t have spaghetti on hand any pasta would do.  I would probably substitute rotini pasta or elbow macaroni.  The recipe calls for the standard size cans of soup, vegetables and beans.

If you do make this and like it then it would definitely be a good one dish meal but I would probably serve with a nice crusty bread.  If anyone does try this I would be interested to know how it turns out, if you cooked the spaghetti first and how many servings you get out of it.

Quick and Easy Pasta Vegetable Soup

1 pound ground beef or ground turkey
1 onion, chopped
salt
pepper
1 can tomato soup
1/2 soup can water
1 can mixed vegetables
1 can kidney beans
1 pound box spaghetti

In a large skillet, brown the ground beef or ground turkey with onions.  Drain and season with salt and pepper.  Add the remaining ingredients, breaking up the spaghetti before adding.  Bring to boil and allow to simmer 15 minutes.

Note:  If you do cook the spaghetti in advance just drain without rinsing and stir in right before serving.

Make it vegetarian and skip the ground beef or ground turkey.  The beans will supply a cheap source of protein,  Alternately, if you don’t like beans you could just as easily leave them out.
